The Skinny on Fats

If you’ve ever found yourself puzzled by
fats, you are not alone. From lard to low fat,
from canola to coconut oil, we never seem
to know what to fat to eat, if any.
Much of our confusion stems back to the
1960s, when a man named Ancel Keys
hypothesized that dietary saturated fat
intake, mainly through meats and dairy prod-
ucts, was responsible for the rising cardiovas-
cular disease in the United States. While the
evidence was shaky at best and later dis-
missed as oversimplified, cherry-picked data,
the American Heart Association agreed, and
made the vague pronouncement to “eat less”
saturated fats and “eat more” polyunsaturat-
ed fats.
However, polyunsaturated fats encompass
contain two bickering families, omega-3s and
omega-6s. While similar in structure, these
fats have wildly opposite actions in the
human body. Omega-3s make anti-inflam-
matory signals, while omega-6s, as a general
rule, make pro-inflammatory signals. So all
of that supposedly ‘heart-healthy’ vegetable
oil -- such as soybean, corn, safflower, sun-
flower, and grapeseed oil – began working to
promote inflammation. Furthermore, these
oils squelch the omega-3 right out of our sys-
tem, since omega-6 competes with omega-3
for space and enzymes in the body – a fact
many researchers still overlook that explains
many puzzling clinical trial conclusions.
As we ramped up our consumption of
omega-6, we unwittingly ramped up our
inflammatory tendencies. To this day,
omega-6 is still the predominant fat in our
diet, with many unaware as to the harm this
may continue to perpetuate.
The light at the end of the fat-free tunnel
began with the Inuit Eskimos, who made
their first cameo in scientific literature after
researchers discovered the link between their
high fat intake and nearly non-existent heart
disease was attributable to the unique type of
fat in their largely marine-based diet: omega-
3s. This revolutionary discovery, which led
to thousands of peer-reviewed publications
on the benefits of omega-3s, had difficulty in
overcoming a pervasive negative public opin-
ion of fats from animals, a mindset that still
persists today.

EPA and DHA the two most critical omega-
3 fats-- essential for neurological develop-
ment and performance, cardiovascular func-
tion, and cellular communication. Correcting
the omega-3 deficiency requires reducing
omega-6 consumption, and aggressively eat-
ing more omega-3 EPA and DHA through
consumption of fish and highly purified fish
oil.
While there is no agreed upon set-intake
level, the FDA has pronounced a tolerable
upper intake level of 3,000 mg of omega-3
EPA and DHA combined as Generally
Recognized As Safe (GRAS) for everyone,
that there is no regulation or purity standard
in the US for how clean a fish oil must be in
order to be sold: this means that a fish oil
can be dirty with PCBs and other environ-
mental contaminants, or high in mercury,
lead, or arsenic. The onus of purity lies solely
with the company you purchase your prod-
ucts from, and many companies even boast
that they do not purify their oils. Nordic
